Eggplant Zucchini Pasta Bake with Mushrooms

Ingredients :

  • 1 eggplant, diced into half of-inch squares
  • 2 tablespoons more-virgin olive oil, divided
  • 1 tablespoon butter
  • 1 zucchini, diced
  • 2 cloves garlic, chopped
  • four mushrooms, chopped
  • 1 onion, chopped
  • 1 (26 ounce) jar simple tomato sauce
  • 1 big tomato, diced
  • 1/four teaspoon dried basil, or to taste
  • 1/4 teaspoon dried marjoram, or to taste
  • salt and floor black pepper to taste
  • half cup dry white wine
  • 1 1/4 cups farfalle (bow tie) pasta
  • 1 3/4 cups grated Parmesan cheese
  • 2 tablespoons grated Parmesan cheese
  • 1 (7 ounce) package deal mozzarella cheese, cut into strips

  • Bring a saucepan of water to a boil. Cook eggplant in the boiling water until on the whole tender, about eight minutes. Drain.
  • Heat 1 tablespoon olive oil and butter in a skillet over medium-high warmth. Saute zucchini and garlic until zucchini starts offevolved to soften, about 5 mins. Add mushrooms; cook till starting to brown, about three mins. Add eggplant; saute till browned, about 2 mins.
  • Heat final olive oil in another saucepan over medium-excessive warmness. Saute onion till golden, approximately 4 mins. Add tomato sauce, diced tomato, basil, marjoram, salt, and pepper. Reduce heat to medium-low and bring sauce to only a boil.
  • Pour wine into the zucchini mixture; reduce warmth and simmer till liquid is nearly long gone, about 6 mins. Add the tomato sauce; mix nicely.
  • Preheat the oven to 350 stages F (175 degrees C).
  • Bring a huge pot of lightly salted water to a boil. Cook farfalle pasta at a boil, stirring from time to time, till tender but corporation to the bite, approximately 12 mins. Drain.
